L'Olivaia is a certified organic and Tuscia DOP olive monoculture company. It extends over the hills of Tuscia, between the Roman amphitheater of Sutri and the ancient Via Francigena, in the middle of four volcanic lakes which determine optimal soil and climatic conditions for the development of the olive tree.
The olive grove extends over 18 hectares with about 7,000 olive trees and is organized by fields and cultivars in order to allow the separate collection of the cultivars of Leccino, Frantoio, Maurino and the autochthonous Caninese and Bolzone, following their different maturation.
The rose bushes, planted at each start of the row, restore color and scent to the fields and signal the different cultivars.
