Oil and the craftsman.
The craftsman according to the etymology of the word (from the Latin ars, art) is the artist: a person who processes raw materials according to rules that belong to the tradition and culture of the territory in which he lives, interprets those rules based on to his sensitivity, his talent, his ability to reach the product of his creativity.


In the Florence of the '200 the guilds in which the craftsmans gathered were 21 of the major arts and 14 of the minor ones: among these the art of the olaioli, of those that are that crushed the olives in the mill to extract the oil. Centuries passed: the guilds dissolved, but the rules remain those of tradition and the oil master continues, half entrepreneur and half artist, to decide on the mixtures of cultivars to be used, on the decantation times of the oil, on the suitability of the degree of maturation of the olives to obtain a good oil.
No oil mill is the same as another. The sense of artisanal production was - and still is today - in the diversification of aromas and flavors, just as the mixture of the cultivars used and the method of production of the oil master was and was different. We have tried to enclose the values ​​that govern our olive oil production in a single text: we have given ourselves an ethical code.



The handicraft mills.
An important and decisive step forward was made with the law No.9 of March 24, 2014 of the Puglia Region in which, for the first time, the function of the craftsman oil mill is defined as the only true producer of oil from olives. At one time the crushing was done with stone mills, today the technologies are increasingly sophisticated and the oil master, a professional figure defined by the law with the establishment of the professional register, has a series of tools to obtain the desired result as to taste, density and color of the oil, without the addition of additives or the use of chemical processes.


The Tuscus extra virgin olive oil mills are oils obtained from olives according to the Tuscus artisanal production protocol deposited in the records of the notary Giorgio Imparato by the oil master Giampaolo Sodano and certified by the consortium of craftsman mills. The excellent quality characteristics that derive from the selection of cultivars, cold extraction and the production method are declared and certified in the consumer's priority interest.
